Fluffy Chocolate Protein Pancakes

Oh pancakes...it takes me back to special occasion breakfasts where my mom would make us something other than our usual toaster strudel, pop-tart, or cereal. We were always rushing off to school or my parents to work in the morning, so something out of a box was the easiest fill. So those mornings where we got pancakes, we savored our fluffy, syrup drowned treats


I still don't eat pancakes often BUT when I do, I make sure they are far more nutritionally sound than your average Bisquick! These Chocolate Protein Pancakes are fluffy and packed with protein from both the protein powder and the egg whites that combine all the goodness together!

They are a great snack before or after a workout to help fuel and repair your growing muscles.

Depending on the protein powder you use, these pancakes won't be very sweet, so have some syrup, honey, jam, fruits, or whatever else you like, to top it off!

Let's make some pancakes!

Chocolate Protein Pancakes


Ingredients

1⁄2 cup (2 oz) oats (blended to a fine powder) 1 oz chocolate protein powder 1 large egg + 2 egg whites 1 fl oz almond milk (1/4 cup)

1⁄4 teaspoon baking powder 1⁄4 teaspoon baking soda 1 tbsp of maple syrup

jam grated coconut nuts

Instructions

1. Mix the almond milk, protein powder, oats, baking powder, and baking soda in a blender until you get a smooth consistency. 2. Spray oil on a nonstick pan and heat. 3. Scoop or pour the mixture for your desired pancake size. Cook until it is golden brown on the bottom. Flip to cook the other side. 4. Add your toppings and enjoy!

So simple, so yummy, and a little taste of childhood.🥞
